To solve the pressure plate puzzle look at the symbols in the Project Pendulum documents in your journal. You need 5 days of the pendulum project to complete this puzzle. They can be found around the watchmaker's home.

Those symbols, in order, are the symbols you need to get to next in a straight line. Note that sometimes the next next pressure plate isn't one of the pressures plates right next to you. Head to the pressure plate with the correct symbol in a straight line. If you make an error step in the pressure plate at the room entrance.
