This is a chicken burger recipe for the ages! Southern cooking is known for its rich, heavy comfort food dishes like fried chicken, buttermilk biscuits, collard greens and mac 'n cheese. Top Chef Richard Blais takes each of these classic Southern recipes and burgerfies them! A ground chicken patty gets double battered and deep fried (in chicken schmaltz, no less) treatment and then teams up with a "patty" of three-cheese elbow macaroni to become a stacked tower of gut-bustin' good eatin'. Some bread and butter pickles and collard greens braised in pork fat provide the tang, crunch and green while the unexpected spice of a tandoori yogurt spread brings the heat AND cool. The cornerstone of any great soul food meal, the biscuit, provides the book ends for this awesome Southern-inspired recipe.
